I think you are going to love this Super Quick and Easy Chicken Taco Soup. This soup has only five ingredients. No, that is not a typo! You probably have everything in your pantry, so you can make this now! If not be sure to pin, share, or save for later.
I needed something fast for lunch, so I went looking in my pantry to find something. My son was wanting tacos, so I compromised with this Chicken Taco Soup. My family enjoyed this so much, that I went and made this soup again for dinner.
I kept this extremely simple, but feel free to add whatever you would like. I used my canned goods in our pantry but you can use store-bought as well. Either way, it will be delicious.
If you need a quick meal, this is it!
- 1 quart of canned chicken with broth (diced)
- 1 pint of canned chicken with broth (diced)
- 1 pint of corn (do not drain) or 1 can of corn
- 2 pints of black beans or 2 cans (drained)
- 1 10oz can of Rotel
- 2 TBS of taco seasoning
- Sour Cream (optional)
- Tortilla Chips or Strips (optional)
- Cheese (optional)
Take your chicken with broth, black beans, corn, Rotel, and taco seasoning and put them in a pot. Warm it up over medium heat and enjoy! It really is just that simple.
I like to serve it with some sour cream and cheese.
