Great Tasting Low Carb/Keto Nachos

I have been on a health/weight loss journey since the birth of my 9th, and last child. I don’t always get it right, but I am happy with how far I have come. I found a great program that fits my busy life, and it gives me options.

Our son’s birthday was over the weekend and he wanted a nacho bar. I always allow the kids to choose their birthday meal. Something I picked up from my mother-in-law. When he said nacho bar, I went all out. We had every flavor of Doritos I could find, along with every fixing I could think of. It was a huge hit!! I didn’t want to miss out, so I made my own low carb nachos. I have been seeing this all over the internet. I am here to say they didn’t disappoint!

This is so easy and you will love it.

Directions

Pre-Heat your oven to 375 degrees.

Brown up your ground beef, drain if needed and add in the taco seasoning.

Wash and cut your peppers. Line them up on your baking sheets.

Take the ground beef and spoon it onto the peppers. Sprinkle on the cheese. Now put it in the oven for 5-10 minutes. If you like crunchy peppers 5 minutes is good, longer if you like them softer.

Now add your favorite low carb/keto toppings and enjoy this great meal!

  • Greek Yogurt (in place of sour cream)
  • avocado
  • lettuce
  • tomatoes
