Dehydrating Celery, Celery Powder And Celery Salt
I am going to be chatting about all things celery today! I am going to give your directions on how to dehydrate celery, how to make celery powder, and how to make celery salt. Are you maybe asking yourself, why? I will answer that as well.
Dehydrated celery is a great staple to have on hand. It can be added to your soups, stews, beans, chicken salad, and so much more.
Let’s chat for a minute about the benefits of celery. This little green veggie doesn’t get much attention, in my opinion. Celery is high in vitamins K, A, B, and Folate. It also contains potassium, copper, magnesium, and calcium. So if you are a juicer, add some celery to your drinks. Then you can dehydrate the pulp and powder it up! No waste, you can’t beat that.
So go grab out or dust off your dehydrator and lets get started.
It is recommended that you blanch your celery prior to dehydrating. The reason for that is it keeps that pretty green color of the celery. Unblanched celery will turn to be a tannish green color. For me, I don’t mind the color. I cook with the celery so, the color is not a factor. So I don’t blanch mine. You can see in the photo above the change in color. You do you and blanch away if you want to keep that bright green color. Either way is fine!
I always start by turning on my dehydrator. That way it is up to temp and ready for the celery. You will want to dry your celery at 135 degrees.
If you want to blanch your celery you will need to bring a pot of water to a boil, and toss in your cut-up (1/2-in) celery. Leave it for about a minute, then drain and run under cold water.
If you choose to not blanch just cut your celery in 1/2-in peices.
You will want to make sure you have your temperature set at 135 degrees. It will talk around 6-8 hours for your celery to dry. I use a 9-tray Excalibur Dehydrator, and it is a workhorse.
Place your celery onto your dehydrator sheets and place it into an already heated dehydrator.
If you want to use your oven to dry celery, that is an option. You want to turn your oven to the lowest temperature setting. If it is higher than 145-150 degrees, I recommend that you prop your oven door open just a bit. You can take a spoon and use that to keep your door open.
This is a doable way, but to me, there are some downfalls. You won’t be able to use your stove for 6-8 hours. You will use up a good bit of gas or electricity. This will heat up your kitchen, and my biggest worry is little children. Be sure to not leave the oven unattended if you have children around. Enough of my PSA.
I get asked all the time what conditioning is. So I made this short video for you, explaining how to properly condition your food. YOU DON’T WANT TO SKIP THIS STEP. All dehydrated food needs to be conditioned.
Once you have conditioned your celery it is ready to go in your pantry.
To make celery salt you will take your dehydrated celery and salt and grind it together! This little coffee grinder is great for making powders. Just that simple!!
I just make it as I need it. I really don’t measure it out. I usually just go by taste. You want to have a good balance of flavor.
Take your dehydrated celery and grind it up into a powder. If it seems to be clumpy after your grind it up. Put it in a coffee filter and place it back into your dehydrator. Dehydrate it at 115 degrees.

- Add it to your smoothies
- Use it as a seasoning
- Add it to potato salad
- Flavor your salad dressings
- Use it for pickling
