I was asked to share some of our freezer/large family meals. So I have been working on getting some recipes together. I wanted to start with stuffed shells. These are so easy to make. So get ready to start filling your freezer!

Ya'll these pancakes are so fluffy! Now I am going to let you in a secret. I tend to change up recipes for a few reasons. First, I don't like to shop for items I won't use. Second, I try to use what I have on hand. Third, I need to keep on our budget. That is a biggie, to be able to stay on budget- I have to change recipes up to fit our budget. All the while still keeping them tasty.
I have been on a health/weight loss journey since the birth of my 9th, and last child. I don't always get it right, but I am happy with how far I have come. I found a great program that fits my busy life and it gives me options.
I have a lot of children, homemade alfredo sauce is a great staple to have on hand for a quick lunch. Also, I have a child in college and these make for a nice meal for him to have at his dorm.

So I planted over 100 squash seeds. I kid you not, I think they all grew! Oh what was I thinking!!!! I had to get creative this year. I dehydrated hundreds of pounds of zucchini and squash, for casseroles and breads. I canned over a hundred jars of squash, and I canned zucchini bread. Oh that was wonderful to have on hand. This zucchini relish was a first for me, and let me tell you, IT WAS A HIT!!!
The longer you leave the eggs to soak up the awesomeness in the jar, the better they are. I may have opened a jar the very next day and ate it, even then it was so good. These pickled eggs do not disappoint! You can WB them if you want, but I don't. It has vinegar, which preserves them.
Spices are expensive. I am always looking for ways to save money, specially when I am going to be using a good bit of it. I found myself going through pickling spice. I use it for my pickles, and pickled eggs and sausage. So I wanted to start making my own. Hope it helps you to save some money. Remember you can adjust for your taste.
